If you want networking la netconf style use netconf with redhat. In debian there is directory  called /etc/network or something edit interfaces file appropriately but I think debian would have asked for interfaces when it installed.

        If you installed package and you  want to configure it lateron
just do dpkg --configure <package name>

 At install time in custom install you are bogged by packages about 3000 something in all.

for installing category of packages there is something called task package
like task-gnome,task-tex etc. which is dependent on all appropriate packages thus installing them too.

If you want to upgrade just do

apt-get upgrade 
then 
apt-get dist-upgrade

su -
