linux can understand whatever file system other than
ntfs is there on the dik and it understands fat as
vfat as u know that there are two fats in windows so
linux keeps the track of the all the fats in the form
of vfat that why u could able to retrieve from second
fat  the first fat was erased but the second fat was 
not 
if u want to see wheteher actually 2ndfat is
maintained or not go for ndd tool
and start scnning the drive.
