There is a nice ups-howto in /usr/doc.
Your UPS should be in position to generate a signal ( a relay contact) for
serial port of server. On getting this signal linux server will coolly shut
down.
My small time headless ( without monitor and key board) linux server uses
this scheme for shutdown with simple press of a switch.
